Contest Winner and Food Fridays

Today is a great combination, not only is a Food Friday I will also be announcing the contest winner at the end of this post! So first the food. While on this clean eating challenge I have been attempting to reduce the amount of wheat I ingest, also when it comes to quiche I have little to no patience for making my own crust so when I saw this on Pinterest, I couldn’t resist trying it out for myself. I loosely followed the directions so if you would like the original recipe click on the link.

Gluten Free Quiche:

20130531-065350.jpg1 small-medium Spaghetti Squash
1 small bunch of Asparagus (about 6 stems)
1/4 Yellow Onion
1 cup chopped, cooked, shelled and deveined Shrimp
Fresh cracked Salt and Pepper to taste
5 eggs
1/4 cup Unsweetened Soy Milk (rice, almond and dairy are fine too)
1/4 cup Organic Goat Cheese Feta

  1. Preheat the oven to 350 degrees.
  2. Cut the squash in half (horizontally) and use a spoon to scrape out the seeds. Discard the seeds. Place squash cut side down on a cookie sheet, and put in the oven for approximately 50-60 minutes, until it has some give when you push on it. Remove from oven and set aside to cool.
  3. While the squash is cooling in a medium bowl mix eggs, salt and pepper and soy milk and set aside.
  4. In a small frying pan cook the asparagus and onion for about 7 minutes, the onion will become translucent and the asparagus will become a deep green.
  5. Now that all the ingredients are ready to go, take a fork and scrape the inside of the squash to remove the meat. Transfer squash into a 9inch pie pan and press it down. As you are applying pressure you will see the squash strands start to mash into each other, don’t be afraid to use a good amount of pressure.
  6. Once you are satisfied with your “crust”, place cooked asparagus and onion, shrimp and egg mixture into the shell, make sure everything is well coated. Then top it off with the feta.
  7. Place pie in oven (at 350) for another 30-40 minutes. It is ready when the middle is no longer liquide and you can shake it without it moving.
  8. Cut and serve

My favorite clean eating treat would be organic fruits like grapes and strawberries. I miss processed foods like cookies and cheetos.

Brittany! What an amazing challenge! My fav “Clean Eating” treat is to take frozen bananas and raspberries and grind them up in a food processor until it’s smooth. It is THE most delicious thing ever

Body and Brain Break

Body Break…does anyone else remember them? Those commercials were the best, I learnt so many things like how to exercise on an airplane.

This week for me has been a break for my body and it has quickly turned into a brain break also, which to be quite honest has been AMAZING! I am just now starting to realize that for the past 7.5 months I have been pretty hard on this here body of mine. It has been a lot of fun but I had completely forgotten about giving it a break now and then. I mean yes I always gave it one day off a week, but other than that I was pretty much on the go regularly which meant little rest otherwise.

As I had promised myself some weeks ago, after my race I was going to be giving my body a much awaited and much needed week off so besides Monday night Run Club I have been off my feet. My week has been filled with gentle yoga, foam rolling, and thinking up new wonderful workout ideas (which my running partner Susan has been kind enough to help me test out – there are just a few more tweaks and then I will be sharing, I promise).

Although I normally struggle with taking a break and letting myself relax so far this week has been pretty glorious, and because of the yoga (even though it is more relaxing than challenging) I haven’t felt the urge to just go to the gym or set out for a run, which I think is contributing to my mind calming down.

I am so grateful that I decided to listen to my body, my trainer and my running partner and just allow myself this rest without feeling guilty about it, like I am cheating myself. My body definitely needed this rest.

I figured now would be a great time for a giveaway to help pump up all of your motivation to stay on course.  I find that generally speaking heading into week three of something can be pretty challenging.  Week one you are all full of motivation and energy to succeed, week two you are starting to feel some positive effects of your lifestyle change, and then week three sinks in.

It is a point in a lifestyle change, a cleanse, or some type of challenge where your motivation may have dwindled a bit, you might be struggling with overcoming a barrier you haven’t ever had to face. You may be feeling like you have been so good so you deserve your sugary, processed food you normally have on Friday nights. Or that perhaps just a couple drinks won’t be so harmful to all the progress you have worked for.  I find it is at this point where you really need something to keep you going and keep you focused on what you goals are, why you started this challenge and why you wanted to commit to it 100%.
