Happy Friday Everyone!!!! Hope you are all enjoying the last work day before the weekend!
As promised here is a super delicious recipe for a lighter pasta. I came across this recipe by accident when all the food I wanted to use had gone bad. By all the food I mean the avocado. Hope you enjoy.
Roasted Veggie Pasta:
1 small head of cauliflowers
1/2 head of broccoli
1 small zucchini
3 tsp olive or coconut oil
Pinch of cayenne pepper
1 tbsp freshly grated parmigiana cheese (optional)
2 medium tomatoes diced
2 cloves of garlic
1/2 lemon juice
large bunch of basil (about 1/4 cup)
5 of whole wheat or gluten free pasta (long noodles work best – I used spahettini)
Preheat oven to 400 degrees.
While the oven is preheating place all the pasta sauce ingredients into a food processor or blender. Mix together and let sit for the flavours to mix.
Mix first 5 ingredients together in a medium mixing bowl. Spread the veggies on a baking sheet in a single layer and roast for 20minutes. Remove from oven and sprinkle with cheese and place back in the oven for 10minutes.
While veggies are roasting boil some water and cook pasta according to directions.
In a large high lipped pan start to heat up pasta sauce, adding in pasta and roasted veggies. Mix everything together so pasta noodles and roasted veggies are thoroughly coated in the pasta sauce. Serve and enjoy immediately.
