This week will be filled with running, yoga and cleaning of the house. Moving things around, finishing off house projects and just getting the house ready for fall/winter…yup unfortunately it is that time of the year again, and I would rather get some of this stuff out of the way while it is still warm out instead of waiting till the last possible second before the snow falls. Although most of the tidying or Fall Cleaning as my husband deemed it the other day has been on the inside of the house, I am sure we will get to the eavestroughs soon enough.
Besides that this past weekend I made a delicious pie with some left over farmer’s market apples, and figured I would share. I was originally going to make some homemade whole wheat pie crust, and then the weekend hit and I was definitely not feeling making pie crust, so yes I wussed out and bought some. Regardless of the pie crust being store bought it still turned out amazing. Seeing I didn’t make the pie crust though, I can only really share a recipe for pie filling.
Apple Pie Filling:
Creates enough filling for a 9inch pie.
6 cups peeled and sliced apples
1 tsp nutmeg
1 tbsp fresh squeezed lemon juice
In a large bowl mix together thinly sliced apple, nutmeg, cinnamon, and lemon juice. Place pie filling into pie shell and cover with more crust. be sure to cut some slits into the top of the pie crust so steam can escape. Cook pie at 425 for 20-30minutes, reducing heat to 350 for an additional 30 – 40minutes. Be sure to rotate pie often so the crust browns evenly.
Allow pie to cool for 10minutes or so, slice and serve.
I used macintosh apples and would recommend using something a little firmer. Although it was delicious the apples got pretty mushy after resting for a while.
