Food Round Up

Sorry for the hiatus for the past couple of days but I was surprisingly no where near the internet, which one would normally think would be painful but it was actually nice to be a little disconnected for a while.

I know this post would normally happen on Sunday, seeing I am playing a little catch up right now, Sunday’s post is happening Monday.   Here is some delicious food from the past week.

pad thaiSome delicious homemade Pad Thai – way easier to make 100% from scratch than I had ever thought it would be.

shrimp azorroSome delicious Arroz Con Pollo, but chicken was subed out for shrimp and tofu…completely delicious

pancakes

Lastly delicious protein packed gluten free pancakes, and here is the recipe:

Protein Pancakes: (recipe from the biggest loser)

1 cup old fashioned oats
1 cup low fat cottage cheese
6 egg whites
1 tsp cinnamon
1 tsp vanilla

Blend ingredients together in a blender until well mixed and smooth. 1/4 cup of mixture makes one pancake. Should make approximately 10 pancakes or 3 servings.
The cinnamon in these guys makes them a special treat, you don’t even need syrup, but lets face it they definitely do taste even better with some maple lathered all over them.

  1. I am going to make those pancakes! what are the chances that the pad thai is gluten free too?? hehe… unlikely since those noodles look like soba noodles!

    • The pad Thai is with rice noodles and tofu. There is fish sauce in the dressing but I think it is gluten free you should be good. Let me know if you are interested in the recipe.
